How to Make Cheese Pie (Tiropita)
Cheese pies are one of those foods people just can't get enough of! Put out a plate and you just can't help yourself. Creamy, salty, and crispy all at the same time. You really cant go wrong with a cheese pie or ten. Maybe invite some people over when you make these so you don't eat them all yourself.
Ingredients:
200 g Feta Cheese
150 g Ricotta Cheese
100 g Gruyere Cheese
30 ml Olive Oil
2 Eggs
A Pinch of Nutmeg
1/4 cup Fresh Dill
Black Pepper
Phyllo Sheets
Oil (for brushing)
Directions:
Add the feta, ricotta, gruyere, olive oil, nutmeg, (deep breath) dill, eggs, and pepper to a bowl. Phew, that's a lot of things to add at once. Now, mix everything until well combined.
Place one sheet of phyllo on the work surface. Drizzle with olive oil. Repeat this three times, but on the third round, brush the olive oil over the dough. So the last time should be more even distribution. Cut this into four equal strips.
Spoon a heaping tablespoon of your cheese filling into the bottom corner of each of the cut phyllo strips. Here's where your origami skills come in. Fold the phyllo in half, diagonally, at the very bottom where your filling is. This will make a little triangle. Now fold this up again, working your way along the strip, keeping your little triangle, and wrapping your cheese goodness up on all sides. Repeat with the rest of your strips, and keep going making your little triangles until you run out of filling.
Tetris your triangles onto a lined baking sheet and brush the tops with olive oil or butter. Bake at 400 F for 12-15 minutes or until nice and golden.
