Greek Chicken Caesar Wraps

Some recipes stick with you not just because they’re delicious, but because you made them so many times they became part of your rhythm. That’s this one for me.

This Greek Chicken Caesar Wrap was one of the top sellers back when I had my restaurant Totally Greek, and it’s still something I make at home all the time. It’s simple, it’s bold, and it hits every time — juicy grilled souvlaki-style chicken, crispy bacon bits, torn herbed focaccia croutons, and a creamy Caesar dressing with a Greek twist, all wrapped in a warm flatbread and seared until golden.

So what makes it “Greek”?


The chicken is marinated like souvlaki — olive oil, oregano, garlic, lemon — then grilled and hit with a little more oregano and lemon just before coming off the heat. Instead of plain croutons, you tear herbed focaccia into chunks and toast it in butter and bacon fat (you read that right). And the Caesar dressing swaps out anchovy and egg yolks for Greek yogurt and pan-seared garlic. It’s rich, tangy, and garlicky — but lighter than a traditional version.

I also crisp the whole wrap in a pan before serving. It’s a small detail, but that sear adds texture and helps everything stay tucked in nicely once it’s wrapped in foil.



Can I make anything ahead?


Yep. The chicken can be marinated the day before, the dressing holds for a few days in the fridge, and the bacon bits and croutons can be prepped earlier too. Just warm up the chicken and assemble when you're ready to eat.

You can also swap in store-bought flatbreads or wraps — just warm them a little first so they’re easier to roll and don’t crack.


How to serve it


Once everything’s rolled up, it gets seared in a hot dry pan until golden, then wrapped in foil to keep it warm. Cut it in half on an angle and serve it just like that — wrap and all. It’s great hot off the pan, but also works packed up for lunch later.

Leftover chicken? Toss it into a salad or stuff it in a pita the next day. But if you build the full wrap — greens, bacon, croutons, dressing, chicken, toasted wrap — trust me, you’re gonna want the whole thing again.
