Arancini (Stuffed Fried Rice Balls)

This is by far my favorite way to use leftover risotto! With a super crispy crust and a gooey cheesy center, you cant go wrong! One of my first jobs in a professional kitchen was making arancini. I’ve made so much arancini that people started using it as my nickname for a while. And I proudly adopted it, of course.
